Rolling Along

It's been a slow and easy Summer here at Bear Creek. I've been lazy, recovering and doing well. I would love to say that I've spent that time in the kitchen, whipping up wonderful concoctions---but I haven't--it's just been too hot to spend much time cooking--Tennessee Summer! We did have the family in last weekend, and enjoyed churning up a batch of homemade ice cream.
This is what I made:

Homemade Vanilla Ice Cream
4 eggs, beaten slightly
4 cups half and half
1 can evaporated milk (13 oz)
2 1/2 cups of sugar
pinch (or 1/4 teaspoon) of salt
2 Tablespoons of Vanilla
whole milk (approx. 5 cups)

Mix the eggs, sugar and salt together. Add in the half and half, evaporated milk and vanilla. Cook over low heat, or better yet, a double boiler, stirring constantly, until the milk steams somewhat. Pour the mixture through a strainer, and cool a little. Pour into freezer container, and add whole milk to the fill line. Freeze, according to freezer instructions.
Enjoy!

The blackberries are coming in, and I picked my first batch last week--I have to say, though, it just wasn't nearly as much fun without hearing, "Over here, Mamaw....here's some more!" (Grandboy); or "It's hot- can we go in now?" (Grandgirl).

I haven't picked enough to bake with yet- the berries seem to be a little late; but I have gotten a few. I love how easy they are to put up. Just wash them gently, and then spread them onto a cookie sheet and pop them into the freezer. As soon as they are frozen, just put them into freezer bags, label, and voila!! They are there to pull out whenever you want to make something fabulous! Couldn't be easier.

While I haven't been baking, I have spent a lot of my recovery time playing with paper- my Sweet Husband bought me a Cricut and I have been having so much fun with it! I'm still learning, and I will post some of the things I've done with it very soon.

This week promises to be busy, with Vacation Bible School starting- I've been preparing crafts for the children, and it's going to be a great week. I hope that your week will be a great one, too!

Good to hear from you! Your picture of the hay is beautiful! We don't do our hay out here that way, they go into bales that are rectangle!

Glad your foot is getting better. Foot surgery isn't fun!

My summer has been disappointing as I have been down with back pain a lot, but hopefully am on the mend.

Good for you have a Cricut--I have a
Cuddlebug, but it is nothing compared to what your fancy machine can do! I'll be anxious to see what you make with it!

Howdy from Texas! I'm making homemade icecream this weekend, so I will grab your recipe and throw some peaches in! Sorry to hear about your foot surgery - my mother had it a couple of years ago and she's gonna have to have it again soon. She has some little tumors that keep coming back and they hurt when she walks on them. Ouch!

I'm so glad to hear you're on the mend, Pam! Sounds like you're staying busy... I had my blackberry patch all ready to work in- and the birds beat me to it! Waaaa!
Homemade ice cream sounds wonderful... I made some 4th of July weekend and Hubby has been asking for it again. Your recipe sounds really good- I may try it next time.

I'm so glad to read that you're feeling better. Please do take it easy, that foot won't heal if you're being naughty!!!

Homemade Vanilla ice cream... what a sweet memory! My grandfather used to make the very best! He was such a sweetie... I don't like Vanilla ice cream UNLESS it's homemade. Any other kind is great from a carton, except vanilla -- it HAS to be homemade! When I tell my husband about yours, he's gonna want to make some right away. We talk about it, but almost never do... Thank you for posting a recipe, too!

You keep getting better now! Have fun a VBS but don't push yourself too much!!!!

Thanks for visiting, Pam! Isn't Tennessee just the most beautiful state? I mean, ya'll get to have a real spring and fall. We have a little bit of winter (usually after Christmas) and then BOOM, it's hot again til October or November. My folks lived in Dickson for about 5 years and then came back to Texas. All our "people" are from Tennessee - Chattanooga area. We've visited Tennessee alot through the years.
I'm sorry to hear that you don't have your dad anymore. I really treasure mine and feel so blessed to still have both my parents around! Hope your foot gets better real quick!

We're doing much better, we still miss her and I try not to think of her for too long (or else I start crying again) but it's impossible not to think of her. Okay, I'm not going to go on about it. Sorry.

I miss hearing what you're up to and about those grandbabies and your sweet relationship with your hubby and what you've been cooking and you promised you'd show some of your projects that you made with your Cricut!!!
